Peanut Nut Lover's Bread

  • 1/4 cup water
  • 3/4 cup milk
  • 1 (2-1/4 tsp.) envelope Fleischmann's® Active Dry Yeast
  • 3 to 3-1/2 cups bread flour
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • 2 tablespoons creamy peanut butter
  • 1 egg
  • 3/4 cup chopped salted peanuts
  • 1 egg white


Heat milk and water until warm (100º to 110ºF).  Add yeast and allow to rest for 5 minutes. 

Combine 1-1/2 cups of flour, sugar and salt in a large mixer bowl.  Add peanut butter, egg and yeast mixture.  Beat 2 minutes.  Stir in peanuts.  Add enough remaining flour to form a soft dough. 

Knead on lightly floured surface for 8 to 10 minutes, until dough is smooth and elastic.  Shape dough into a ball and place in a greased bowl, turning once to cover.  Cover and let rise in a warm, draft-free place until dough is doubled in size, about 1 to 1-1/2 hours. 

Punch dough down.  Remove dough to lightly floured surface and roll to a 12 x 8-inch rectangle.  Roll up tightly as for a jelly roll, beginning at short end.  Pinch seam and ends to seal.  Place in a greased 9x5-inch loaf pan, seam side down.  Cover and allow to rise again until doubled in size, about 1 hour.

Beat egg white and brush on loaf.  Make three diagonal cuts on top of loaf with a sharp knife. 

Bake for 40 to 45 minutes in a preheated 375ºF oven.  Shield loaf with foil after 20 minutes to prevent excessive browning if necessary.  Remove from pan and cool on wire rack.
