Five Spice Bread with Chinese Chicken Salad


This bread is great for a chicken salad sandwich.

  • 3/4 cup water
  • 1/2 cup milk
  • 1 (2-1/4 tsp.) envelope Fleischmann's® Active Dry Yeast
  • 1-1/2 tablespoons sugar
  • 2 to 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon Chinese five spice
  • 1 tablespoon shortening
  • 1 egg + 1 tablespoon water
  • 1/2 teaspoon black cracked pepper
  • Chinese Chicken Salad
  • 2-1/2 to 3 cups cooked chicken
  • 1 cup frozen peas, thawed
  • 1/4 cup finely chopped onion
  • 1/2 cup salted cashews, chopped
  • 1/2 cup peanut sauce
  • 1/4 cup mayonnaise


Heat water and milk until warm (100º to 110ºF).  Add yeast and sugar and allow to rest for 5 minutes. 

Mix 1 cup flour, salt and five spice in a large bowl.  Add shortening and yeast mixture.  Add enough remaining flour to form a soft dough.   

Knead on lightly floured surface for 8 to 10 minutes, until dough is smooth and elastic.  Shape dough into a ball and place in a greased bowl, turning once to cover.  Cover and let rise until dough is doubled in size, about 1 hour. 

Punch dough down.  Form dough into an 8-inch loaf and set on greased baking pan.  Cover and let rise until doubled in size, about 40 minutes. 

Whisk together egg and water and brush over bread; sprinkle with pepper.  Bake for 35 to 40 minutes in a preheated 375ºF oven.

Combine all ingredients for Chinese Chicken Salad in a medium bowl. Cover and chill until ready to assemble sandwiches.
