Banana Yeast Bread
Also great for toasting! Try with a bit of honey or a smear of cream cheese.
40 to 45 minutes
25 to 30 minutes
1 cup whole wheat flour
6-1/2 to 7-1/2 cups bread flour
2 (4-1/2 tsp.) envelopes Fleischmann's® RapidRise Yeast
1/2 cup sugar
1 teaspoon salt
4 egg whites
3 medium ripe bananas, mashed
3/4 cup milk
1/2 cup butter OR margarine, softened
1 teaspoon water
Combine whole wheat flour, 1 cup of bread flour, undissolved yeast, sugar, salt, egg whites and bananas in a large bowl.
Heat milk and butter until very warm (120º to 130ºF), butter will not melt completely; add to banana mixture.
Beat on low speed until combined. Beat on medium speed for 3 minutes. Stir in enough remaining bread flour to make soft dough.
Knead on a lightly floured surface for 4 to 6 minutes, until dough is smooth and elastic. Cover and let rest 10 minutes.
Divide dough in half and shape each half into an oval loaf, about 9 inches long. Place on a greased baking sheet; cover and let rise until doubled, about 40 minutes. Using a very sharp knife or razor blade, slash 2 to 3 cuts about 1/4-inch deep in the top of each loaf.
Beat remaining egg with water; brush over loaves. Bake in a preheated 375ºF oven for 25 to 30 minutes or until golden brown.
