Bread Line Loaf


Fleischmann's Yeast has a long history of helping others. Louis Fleischmann, in addition to operating Fleischmann's Yeast, was also the owner of a famous restaurant in New York City from 1876-1904. Not only was he well known for his successful entrepreneurial spirit, Louis Fleischmann also became known for his philanthropic ways. His philanthropy became legendary when on a cold winter night in 1894, he observed numerous people huddling to keep warm. Louis thought that instead of selling day old bread at half price; why not give it away to people in need. Soon thereafter, Louis operated the first "Bread Line" in America. The location was at Tenth and Broadway in New York and remained in operation until Louis' death in 1904. Louis' charitable acts led many other establishments to follow in his footsteps helping many along the way! Fleischmann's Yeast asks all of you this Holiday season to help those in need and contribute to those less fortunate.
Makes 1 loaf

3 to 3-1 / 2 cups all-purpose flour
2 tablespoons sugar
1 envelope Fleischmann's® RapidRise Yeast
1 teaspoon salt
1 cup water
3 tablespoons butter or margarine
2 teaspoons melted butter or margarine


Directions
In a large bowl, combine 1 cup flour, sugar, undissolved yeast, and salt. Heat water and 3 tablespoons butter until very warm (120o to 130o F). Gradually add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Stir in enough remaining flour to make a soft dough. Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes.

Divide dough into 2 equal portions. Roll each portion to 8-inch square; shape into thin loaves. Place loaves side by side in greased 8 -1 / 2 x 4-1 / 2-inch loaf pan. Cover; let rise in warm, draft-free place until doubled in size, about 45 minutes.

Spoon melted butter down center of loaf. Bake at 375oF for 30 to 35 minutes or until done. Remove from pan; cool on wire rack.
