Hearty Apple Rye Bread

Makes: 1 loaf

This recipe has earned the goodfibes™ seal indicating it is a good source of fiber. The sweetness of dried apple adds delightful flavor to this rye bread. It makes fabulous toast!
1-POUND LOAF     INGREDIENTS                        1-1/2-POUND LOAF
3/4 cup plus water 1-1/3 cups
2 tablespoons
1 tablespoon butter or margarine 1 tablespoon
3/4 teaspoon salt 1 teaspoon
1-2/3 cups bread flour 2-1/2 cups
1/2 cup medium rye flour 3/4 cup
1/3 cup whole wheat flour 1/2 cup
1/3 cup chopped dried apple 1/2 cup
2 tablespoons sugar 3 tablespoons
2 tablespoons cornmeal 3 tablespoons
1/4 teaspoon Spice Islands® Ground Allspice 1/2 teaspoon
1-1/2 teaspoons Fleischmann's® Bread Machine Yeast 2 teaspoons

Use the 1-pound recipe if your machine pan holds 10 cups or less of water. Add ingredients to bread machine pan in order suggested by the manufacturer, adding the apple with the flours. (If dough is too dry or stiff or too soft or slack, adjust dough consistency - see Adjusting Dough Consistency tip below.)

Recommended cycle: Whole wheat/whole grain or basic/white bread cycle; light or medium/normal color setting. (If basic/white bread cycle is used, add 1 tablespoon gluten to either size recipe - see Adding Gluten tip below.) Timed-bake feature can be used.

Adjusting Dough Consistency: After mixing for a few minutes, the ingredients should turn into a smooth ball around the kneading blade. If the dough appears too stiff or too soft, add more liquid or flour in 1 teaspoon increments, until the proper consistency is reached. Do not add more than 3 to 4 teaspoons liquid or flour. The machine can not compensate for wide variations and may not bake the larger amount of dough thoroughly.

Adding Gluten: Some bread machines have a whole wheat or whole grain cycle, which comes in handy when making whole grain breads. If your machine does not have this cycle, try adding gluten to whole wheat, whole grain, and rye bread recipes to improve loaf height, texture and structure. Use 1 tablespoon for both 1 and 1-1/2 pound recipes.  If your supermarket does not carry gluten, check with a health food store.
