Stout Rye Bread


Makes: 1 loaf

This recipe has earned the goodfibes™ seal indicating it is a good source of fiber. The robust flavor of this rye and caraway loaf comes from using dark beer or stout. For a milder flavor, substitute regular beer.
1-POUND LOAF     INGREDIENTS                        1-1/2-POUND LOAF
1/2 cup water 3/4 cup
1/2 cup dark beer or stout 3/4 cup
1 large egg 1
1 tablespoon butter or margarine 1 tablespoon
3/4 teaspoon salt 1 teaspoon
1-3/4 cups bread flour 2-2/3 cups
1 cup medium rye flour 1-1/2 cups
1 tablespoon packed brown sugar 4 teaspoons
1/2 to 3/4 caraway seed 3/4 to 1 teaspoon
teaspoon
1-1/2 teaspoons Fleischmann's® Bread Machine Yeast 2 teaspoons


Directions
Use the 1-pound recipe if your machine pan holds 10 cups or less of water. Add ingredients to bread machine pan in the order suggested by manufacturer.

Recommended cycle: Use whole wheat/whole grain or basic/white bread cycle; medium/normal color setting. (If basic/white bread cycle is used, add 1 tablespoon gluten to either size recipe - see Adding Gluten tip below.)

Adding Gluten: Some bread machines have a whole wheat or whole grain cycle, which comes in handy when making whole grain breads. If your machine does not have this cycle, try adding gluten to whole wheat, whole grain, and rye bread recipes to improve loaf height, texture and structure. Use 1 tablespoon for both 1 and 1-1/2 pound recipes.  If your supermarket does not carry gluten, check with a health food store.
