Scandinavian Rye Bread

Remember, don&#39;t make loaves larger than recommended by your bread machine manufacturer. Use the 1-pound recipe if your bread machine pan holds 10 cups of water or less.

                                   1-POUND LOAF     1-1/2-POUND LOAF
Water (70o to 80o F) 3/4 cup 1 cup
Light molasses 1 tablespoon 2 tablespoons
Vegetable oil 1 tablespoon 2 tablespoons
Bread flour 1-1/2 cups 2-1/4 cups
Medium rye flour 1/2 cup 3/4 cup
Quartered pitted dates 3 tablespoons 1/4 cup
Nonfat dry milk 2 tablespoons 3 tablespoons
Gluten (optional) 1 tablespoon 1 tablespoon
Salt 3/4 teaspoon 1 teaspoon
Freshly grated orange peel 1/2 teaspoon 1 teaspoon
anise seed 1/4 teaspoon 1/2 teaspoon
fennel seed 1/4 teaspoon 1/2 teaspoon
Fleischmann's® Bread Machine Yeast 1-1/2 teaspoons 2 teaspoons


Directions
Measure all ingredients into bread machine pan in the order suggested by manufacturer, adding dates with flour.

Select basic/white bread cycle; use medium/normal crust color setting.

When cycle is complete, remove bread from pan; cool on wire rack.
