During the week that bridges Christmas and the New Year, most of us are caught up with the aftermath of one celebration and the preparation for another welcomed opportunity to do more baking. After all, these are the days when friend and family visits are commonplace.

We’ll contribute 10 cents when you share recipes in either of these ways. Just go to the website and follow the simple directions.

At this busy baking time, we’re sending you this bonus issue of Knead to Know with three recipes that you can bake any time.  Two of these recipes are meant to inspire breast cancer awareness by calling to mind the ongoing theme of Susan G. Strawberry Circle Of Hope Tea Ring

Simply delicious, this is a veritable masterpiece that symbolizes in its appearance and name, all of our hopes for a breast cancer cure. You’ll add vanilla pudding to the dough for more taste and texture. Strawberry jam and pecans are called for in the delectable filling. Top it all with a glaze that features one pink or red chewy fruit roll and you’re “in the pink.” Feel free to add that familiar pink ribbon to the top to really communicate a powerful message.

Think Pink Breakfast Bread

This recipe is aptly named for the color you will achieve through additions of cranberries in the filling and a bit of optional food coloring in the icing. The fruit filling may also include apricots and golden raisins along with any other dried fruit that you would like to include. A bit of amaretto cordial-type liquor in the cream cheese and butter-based icing make this recipe a perfect offering for a New Year’s Day brunch – or anytime you’re looking for something unique and special. The results will cast a pink glow of hope.

Hearty Chicken Pot Pie

Even if you don’t live in a climate where the wind is howling and the chill is making you wish for warmer days, there’s nothing quite as cheerful as this Hearty Chicken Pot Pie. It’s a complete meal because in addition to cooked chicken, the filling calls for mixed vegetables – that 16-ounce frozen variety that you always seem to have on hand in your freezer. Your crust will be made from gloriously good biscuits – ideal in this recipe, but also ready to become a stand-alone biscuit recipe in your collection. Let it snow, let it snow, let it snow – as long as you can welcome them home to this ultimate comfort food!

CARRYOVER FROM EARLY DECEMBER:
Rapidmix Cloverleaf Rolls

If you want to serve these on New Year's Eve or New Year's Day, you can use the refrigerator method to allow the dough to rise and offering you the flexibility to prepare these rolls in advance at your own planning pace.  That’s because you can store the dough in your refrigerator from 2 to 48 hours, giving you lots of real time baking options. And actual oven time is just 15 minutes! Chances are that you already have the basic ingredients like sugar, butter, egg, and flour on hand which you’ll bring together with your electric mixer for a fabulous addition to any meal. You’ll yield a batch of 27 delicious rolls.

Southwestern Herb Rolls

Here’s another roll recipe that you can serve at your New Year's Eve party, but this one has a very different taste than the previous recipe recommendation. Parmesan cheese, minced onion, oregano, pimentos and whole cumin seed bring southwestern tastes to your table, complimenting a wide range of meals – from soup to salad to stew. It takes a short time to put this recipe together and a short bake time of only 20 minutes. Try it once and you’ll want to serve these great rolls again and again.
